More July Birthday Fun

As many of you know our family gets to celebrate two birthdays in the month of July - that happen to fall just over a week apart. These are some highlights from Daddy's special day.

I was trying to be creative with what we had at the house. (We were on a "no spending" kick due to a little mistake) All we had were two dark chocolate cake mixes, a devil's food cake mix, and a lemon cake mix. Dan doesn't like chocolate cake so that narrowed things down to lemon, but I would still have to make frosting. So, I decided to look through my cookbooks and try to find something a little fancier to fix - but we had to have all the ingredients on hand.

I really wanted to make something special and memorable, since he wasn't getting any gifts, he had to work all day, and he had an EQ presidency meeting that night. (A typical birthday when you are an adult) So, I decided to attempt a cheesecake from scratch. Not just any cheesecake, but a sour cream cheesecake, it was a lot easier to make than I though it would be. I was pleased with the outcome and there were no complaints heard at the table. So I think it was "mission accomplished!"

We couldn't find "birthday" candles - so we had to improvise for the kids.
Not bad for my first attempt - it only had one crack, but it tasted really good if I do say so myself.
The Birthday boy - he enjoyed several phone calls from family members. I think his grandparents started his day off right - they were the first to wish him a Happy Birthday!
